Stir-Fried Bok Choy with Garlic and Ginger

Ingredients:

  • 1 lb. Purple Sunshine's hydroponically grown fresh Bok Choy

  • 2 tablespoons olive oil (or sesame oil for a more robust flavor)

  • 3 cloves garlic, minced

  • 1-inch piece fresh ginger, peeled and minced

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional for richer flavor)

  • 1 teaspoon sesame seeds (optional for garnish)

  • Salt and pepper to taste


Instructions:

  1. Prepare the Bok Choy: Rinse the Bok Choy thoroughly under cold water. Cut the stems from the leaves, then slice the stems into bite-sized pieces. Keep the leaves whole or cut them into large pieces for easier serving.

  2. Heat the Oil: In a large pan or wok, heat the olive oil over medium heat. Once the oil is shimmering, add the minced garlic and ginger. Sauté for about 1 minute until fragrant, but be careful not to let them brown.

  3. Cook the Bok Choy Stems: Add the Bok Choy stems to the pan first, as they take slightly longer to cook than the leaves. Stir-fry for about 2-3 minutes until the stems start to soften.

  4. Add the Leaves and Sauces: Toss in the Bok Choy leaves, along with the soy sauce and oyster sauce (if using). Stir-fry everything together for another 2-3 minutes until the leaves are just wilted and the stems are tender but still crisp.

  5. Season and Serve: Taste and adjust the seasoning with salt and pepper as needed. Garnish with sesame seeds if desired, and serve immediately.
